New Zealand dairy foodservice brand, Anchor Food Professionals, has partnered with WorldChefs to showcase 11 internationally renowned chefs in its latest “Taste of Tradition” campaign.
The campaign celebrates culinary creativity, showcasing chefs reimagining traditional dishes from their countries with a modern twist.
Innovative recipes from around the world have been compiled into a digital cookbook titled “Taste of Tradition.”
Among the international chefs is award-winning chef Amber Heaton, who captained Australia at the 2024 IKA Culinary Olympics in Germany. This young talent has reimagined the popular Australian dish “Chicken Parmi” Parmigiana, creating an elevated Chicken Parmigiana Bites served on a bed of Napoli sauce with green oil and topped with crispy prosciutto.
Amber says, “Chicken Parmigiana is a hugely popular dish in Australia and you’ll find it on every pub menu, so it was fun to reimagine this classic dish using Anchor Food Professionals’ dairy products.”
“I started working in kitchens at the age of 15 and quickly fell in love with the industry, which has given me so many opportunities I could only dream of during my apprenticeship. I’m grateful to have been part of the Taste of Tradition campaign and look forward to representing Australia at the WorldChefs Global Young Chefs Challenge in Singapore in October,” she added.
A modern take on kiwi pavlova
Working with Amber, New Zealand chef Cameron Davis, who has worked as a private chef for celebrities including Beyoncé, Jay-Z, Paris Hilton, Bono and Rihanna, created a modern take on Kiwi Pavlova featuring white chocolate mousse, vanilla whipped mascarpone and strawberry sorbet.
“My love of cooking was sparked by my grandmother’s passion for food and it quickly became my lifelong love and career,” said Cameron. “For me, my culinary inspiration comes from sourcing quality local ingredients, treating them with care and using great technique to create simple, delicious dishes, so it was a natural fit for me to get involved in the Taste of Tradition campaign.”

The Global Chef Challenge will bring together 40 teams of top chefs to compete across four competitive categories and showcase their culinary prowess.
