Tom Shepherd is delighted to announce Michael Blades as the new Head Chef of Upstairs by Tom Shepherd in Lichfield, Staffordshire’s only Michelin starred restaurant. Mike has known Shepherd for more than 11 years and was instrumental in opening Upstairs in 2021, with Tom serving as sous chef. Previously, Mike worked as a commis chef at two Michelin star restaurant, Sat Bains, before going to Adams in Birmingham, where Tom became head chef at Adams and Mike became chef de partie and then junior assistant. I worked with Tom again as he was head chef. When the coronavirus hit, Mike went on a trip while Tom was getting ready upstairs. Upon his return, he co-ran the successful Dine at Home Boxes with Tom Shepherd before Upstairs officially opened in October 2021.
The promotion is part of Tom’s strategic expansion, with an eye toward opening a second, more casual restaurant and bar location, as well as Tom’s continued work.
The Wembley Stadium experience of overseeing an England match in the Bobby Moore Lounge. We also work with Royal Ascot, Wimbledon and a growing number of dining events and brand activities.
Mike will oversee a 10-person kitchen force at Upstairs, cover 40 people, and continue to showcase the signature dishes the restaurant has become famous for, including Orkney scallops, peanut satay, radish and coriander. Herefordshire beef, garlic, tarragon, onion and smoked. and the British favorite “No Ordinary Schoolboy,” banana, rum, and caramel.
