The Forge at Hotel Indigo Chester has welcomed a new collaboration with Aubrey Allen, launching an exciting new summer menu. The Forge, the first restaurant to be awarded two AA Rosettes in 2023, is recognised as one of Chester’s best restaurants. A third generation family-run business and Royal supplier, Aubrey Allen supplies ethically sourced, naturally produced meats including heritage sirloin, grass-fed fillet, ribeye, rump cap, picagna, bavette steak and Cumbrian chicken.
Aubrey Allen prides itself on the quality and shelf life of its meat. The company selects only the top 4% of the best beef cattle in the British Isles and supports British farmers. Cattle are born and raised in clean, environmentally friendly ways that enhance flavour and are free-range on pasture for the majority of the year, which is essential for superior quality beef and the welfare of the cattle. Beef is aged for a minimum of 28 days in specially designed enclosed dry maturing rooms to enhance flavour and tenderness. Aubrey Allen beef is the most ethically produced meat, allowing customers to eat sustainably raised meat with a conscience.
Due to open in Spring 2021, the 70-seat restaurant is passionate about wild, sustainable British produce and cooking simply over fire and charcoal. Head chef Dan Regan is hugely passionate about sustainable, wild and seasonal ingredients. Though the focus is primarily on meat dishes, The Forge also serves fish, vegan and vegetarian dishes such as wild sea bass bouillabaisse with smoked aubergine, courgette and tomato, and celeriac with miso, seaweed, mushroom and dashi.
