At the helm of the hotel’s three Greek restaurants (ZEUS, KNOSSOS and MINOAN) is Chef Consultant Nikos Roussos, a two-star Michelin winner who currently serves as Executive Chef and Co-Owner of the acclaimed Modern Greek Restaurant in London. With a focus on modern Greek cuisine and a seasonal flair, the chef has created menus that feature exquisite home-cooked dishes that reflect the culinary traditions of Crete using carefully selected local ingredients.
