Quill launches after successful opening of Plume and Finch

With a mission to make wine bars more intimate and connected to wine storytelling, Fables & Company’s newest site is set to do just that, with Quille being the brand’s largest space and kitchen to date.
Located on the historic riverside gateway to Borough Market, Quill can accommodate 75 covers in 2000 square feet of space spanning internal arches and outdoor gardens. While the interior mimics a quaint wine cellar and is filled with artwork, exquisite wines and items from exciting world travel adventures, the exterior is an ode to the English garden.

Quill is characterized by a focus on fine wines with reduced profit margins, allowing customers to obtain fine wines at low costs. The focus on British wines continues, with an expanded focus on still wines and the festive bubbles found in Plume. The core mission remains to explore lesser-tasting wines and twists on known varietals, and incidental education is the driving force.

The kitchen serves up the best of British cuisine, including sea bass on a bed of leeks and white miso beans and a duck confit burger so hearty you’ll need a napkin. A variation on Quill’s hot dog, the Boar Hot Dog with Bacon Jam and Pickles, which rivals Plume’s Pork & Cheese Hot Dog, is Faible & Co.’s take on pairing gourmet street food with a selection of fine wines. It is a proof of reputation.
Quill will join the ranks of Cahoots, Angry Crab Shack and Cafe Francois in a surge of upscale bar openings in the Borough Market area. This trend highlights the region’s growing reputation as a resurgent and expanding hotspot.
Quill offers a third spatial aesthetic. With a timeless design, it’s a place to relax and chat. Served by a staff of theatrical eccentrics who bring both food and conversation to the table.
Gray collaborates with famous designers, Sophie Bickness Studio Bear creates unique and unconventional designs. Uniquely located within a railway arch leading to London Bridge station, this bar is a blend of past and present, decorated with objects and art that inspire conversation and new ideas.
The space will continue to host nights of group interactive activities, including “secret notes” where customers anonymously pass notes between tables, complimentary “tarot readings,” and nights dedicated to traditional card and dice games. It will be held.

The bar was born 14 years after the founding of Fables and Company, formerly known as Glaze and Feather.
