Brian’s love for pastries began 19 years ago and was first discovered while working at a local pastry shop in Villefranche-de-Lolaguet, France. This passion only grew as Brian honed his craft around the world, from Melbourne to Tokyo to London.
He joins the Cameron House family from Raffles London at The OWO in Whitehall, where he was Pastry Sous Chef. Previous experience includes pastry chef positions at some of the UK’s top restaurants and hotels, including London’s five-star hotels, the Mandarin Oriental, The Lanesborough, Club Gascon and The Fat Duck.
Brian brings a wealth of knowledge and creative talent. Brian will lead the pastry team through the busy festive period and beyond, with a focus on communicating the beauty of simple, organic ingredients through sophisticated plates and flavor combinations. This includes seasonal updates to the hotel’s famous Afternoon Tea, showcasing the best local produce throughout the year.
