TWO Lancashire hotel chefs are celebrating qualifications that will give them new leadership skills in the hospitality sector.
Lancaster House Hotel’s dynamic culinary duo of Joey Longmire-Dodd and Sam Pearce are both studying a two-year course as part of their continuing professional development.
Joey, 28, from Lancaster, rejoined the hotel’s culinary team in 2018 and worked his way up to become sous chef. He successfully completed his NVQ Hospitality Manager Level 4 qualification.
Meanwhile, Sam, 38, also from Lancaster, is the first learner to achieve distinction as a Level 3 Senior Sous Chef Apprentice at Babcock International.
The chef training was conducted with support from English Lakes Hotels Resorts & Venues in partnership with Inspiro Learning and Babcock International. This allowed them to hone their skills while continuing to build a career and earn a living.
Both chefs have been able to step up and take on greater responsibility as a result of their studies, supporting Head Chef Damien Ng at Lancaster House Hotel in supervising kitchen team members, managing shifts, planning menus and We supported the provision.
Sam explains: “Both Joey and I feel that the training has had a very positive impact on our business visualization. It has certainly sharpened our awareness of managing the kitchen to keep it running as smoothly as possible.
“We both really enjoy research and can clearly see how our developments over the past two years are helping the food and beverage team move forward. Our goal is to help other It’s about passing on as much knowledge as possible to the culinary team.”
Damien Ng added: “We are excited about Sam and Joey’s progress and the attainment of these highly valuable practical qualifications. This training has had a huge impact on them. He has the ability to see the big picture and has the management skills to think creatively to address challenges.”
